PIZZA!

Pizza!!! who doesn't love Pizza?! I know that I do!

Our Publix started carrying fresh pizza dough this summer, and one of my favorite things to do is make home-made pizza!

Last night, Billy was working late, so I made chicken pesto pizza for one.... It was really good, and pretty darn easy, too!

You'll need:
1 pizza dough ball from publix
flour
LOTS of garlic
butter
olive oil
salt and pepper
chicken cut into bite sized strips
Pesto
pizza sauce (or marinara)
LOTS of mozzarella cheese
sauteed onions

parchment paper and a cookie sheet

Start by taking the dough out of the fridge and resting it on the counter for about and hour.  Then preheat the oven to 400 degrees.  When its getting close to being time for the dough to being done resting, saute the onions in butter, olive oil, and garlic.  In a skillet, take the cut up chicken, and stir in butter, olive oil, garlic, and the salt and pepper.  Cook the chicken until it is done, and then toss it in a couple of tablespoons of the pesto.  Set the chicken and onions to the side.  Get a piece of parchment paper and sprinkle the flour on it, the dough, and your rolling pin.  Cut the dough into thirds for a mini pizzas.  Roll out your dough for your desired thickness.  I like thin crust!! Brush the top of the dough with olive oil.   Spread a couple of tablespoons of marinara on the crust and spread it evenly across.  Put one heaping tablespoon of the pesto and gently spread it across the marinara.  Top with the chicken, onions, a little bit of minced garlic, and then the cheese.  Brush the outer crust with olive oil and garlic powder.  Cook on the parchment paper on a cookie sheet for about 15 minutes.

There are LOTS of different options for toppings ( you know what pizza is, duh).... A tip for rolling out the dough- use LOTS of flour on the parchment and on the rolling pin!! Use your hands too!


Try making your own pizza!! Its SO good- way better than dominos!
